Julien

Julien

With a rich professional background, he’s been by our side from the start, acting as our right-hand man. Always on the lookout for new horizons, the indefatigable and passionate Julien signs the wine list, which he carefully selects to accompany our Franco-Philippine cuisine.

Loan

Loan

Loan graduated with a BTS in hotel and catering management in June 2023. His key job in the kitchen is cooking. He prepares all the sauces, juices and sublimates the cooking of meats, fish as well as the garnishes that accompany them.
He’s full of ambition and has a bright future ahead of him.

Enora

Enora

Enora joined the nipa team in December 2023. After several seasons at the seaside, she returned to her native Sarthe.
Today, she’s a chef de rang and makes the service shine with her organization and daily smile.

Julian

Julian

Julian obtained his BTS in hotel and catering in June 2023. He began his career in a gourmet restaurant. Seduced by our project, he joined our team in September 2024. He will be in charge of the pantry.
Julian is very serious, motivated and eager to learn.

Maxence

Maxence

Maxence has a BTS in hotel and restaurant management. He is head waiter and bar manager. He prepares our cocktails and mocktails of the moment, as well as all the liqueurs and spirits on our drinks menu.
He’s curious, kind and a good listener.

Lisa

Lisa

Lisa, trained with the prestigious Compagnons du devoir community. She is a demi chef de partie and assists Sharon in pastry-making, creating desserts. Lisa is a quiet force, a beautiful and endearing person.
She forms a very complementary team with Sharon.

Timothé

Timothé

He’s the latest addition to the nipa team.
Having just obtained his BTS, we welcome him to discover the art of cooking.
Benevolent and committed, he brings his good humor and his desire to do well.

Valérie

Valérie

The doyenne of the restaurant, she is the soul of Maison Nipa, our landmark and our mother at heart. Valérie is in charge of the dishwashing and participates in the kitchen preparations.

Mathilde

Mathilde

She’s in her second year of a CAP in service and marketing.
We train her on a daily basis and support her throughout her training. We’re proud to have her as an apprentice, and delighted that she’s flourishing alongside us.

You want to be a part of a team that is young and dynamic, with a new approach to responsible gastronomy where technicality and agro-ecology are of the utmost importance.

We base our concept and philosophy on the mix of our two cultures, using the French “terroir” and adding influences from the 7000+ islands that constitute the Philippine archipelago.
