We are Maison Nipa: Sharon and Jason. Two chefs, one sweet and one savory, one Filipino and the other French. We are passionate about cuisine and pastry, and over the past 10 years we have worked in many prestigious establishments such as Alain Ducasse Paris, Hibiscus London, Arcé Basque country, Table de Pavie Saint-Émilion, and Auberge de Bagatelle Le Mans.
We unpacked our suitcases in Fillé for an ambitious project, our heads filled with ideas.
They are more than our team, they are family; all together we are whole, everyone having their role to play.

You want to be a part of a team that is young and dynamic, with a new approach to responsible gastronomy where technicality and agro-ecology are of the utmost importance.
We base our concept and philosophy on the mix of our two cultures, using the French “terroir” and adding influences from the 7000+ islands that constitute the Philippine archipelago.
