Julien

Coming from a rich professional background, he has been at our side from the start; our right-hand man. Always on the quest to reach new horizons, the untiring and passionate Julien has his signature wine list that he chooses meticulously to accompany our French-Philippine cuisine.

Samy

Samy

Samy is our assistant Maître d’hôtel and has a long experience in the world of haute gastronomy and events.
His kindness, calmness and positive nature makes him an essential force during service and daily restaurant life.
Margot

Margot

She is our ray of sunlight in the kitchen, her good humour is contagious. Margot is very invested in her role as sous-chef and heads the organization in the kitchen, helps in our creations and sets the daily tempo.

Mikail

Mikail

Always armed with a little joke to tell or a story to share. He is responsible for our little « awakening of the senses » and our appetizers and takes his role very seriously.

Loan

Loan occupies a very important post concerning the meats, fish and garnishing that accompany them. Even if he just graduated with a BTS diploma, at a young age he proves to have a maturity for the culinary world beyond his years.

She is responsible for the cocktails and mocktails at our lounge, drinks that are always following the seasonal produce within our french-philippine world. Enora accompanies our guests with a smile and easy kindness for the duration of their experience.

Valérie

Valérie

The most respected in our restaurant and the soul of Maison Nipa, our landmark and mother at heart. Valérie attends to the dishwashing and participates in the daily kitchen.

Mathilde

Mathilde

She is in CAP service and commercialization for a duration of two years at Maison Nipa. Motivated and always in good spirits, she has everything to become a grand professional in her domaine. We are forming her daily and accompany her in any way needed.

Emi

Emi

She is in an accelerated CAP cuisine course for a duration of one year. Emi is very serious in school and at the restaurant. She has a passion for pastry but wishes to learn the kitchen basics that will be useful for her future.

Florian

Florian

He is in his last year of his Bac pro cuisine course. Florian has a love for good cuisine that fills his soul and stomach. Always smiling, we are forming him daily so that he can obtain his diploma.

You want to be a part of a team that is young and dynamic, with a new approach to responsible gastronomy where technicality and agro-ecology are of the utmost importance.

We base our concept and philosophy on the mix of our two cultures, using the French “terroir” and adding influences from the 7000+ islands that constitute the Philippine archipelago.
